Healthy pineapple ice cream (low FODMAP, gluten-free, lactose-free, vegan)

You really cannot count on the Dutch summer weather. Last week, when I made this recipe, it was very warm and this week it has been rainy, cloudy and sticky most of the time. But it is still summer, so I think I should just share summer recipes with you. Rain or no rain. Hopefully, the sun will be back soon! Today I have a delicious recipe for healthy pineapple ice cream for you! It only has three ingredients, not a lot of calories and the ice cream is super creamy and refreshing. A real treat, that also fit into a healthy lifestyle. You could even have it for breakfast!

What do you need (for 4 servings)

300 g frozen pineapple
120 ml canned coconut milk
2 tbsp maple syrup
How to make the healthy pineapple ice cream

Put all ingredients together in a blender.
Blend until you have a smooth mixture and serve immediately!
